Chocolate Coconut Protein Muffins
Ingredients
- 2 Scoops of chocolate protein powder
- 2 Tbsp Truvia
- 4 Tbsp Cocoa Powder
- 1/2 Cup Ground Oats of Coconut Flour
- 1 Tsp Baking Powder
- 1 Tsp Baking Soda
- 1/4 Tsp Salt
- 1/4 Cup Unsweetened Shredded Coconut ( and a little extra for dusting)
- 1/2 Cup Unsweetened Apple Sauce
- 1/4 Cup Non fat Greek Yogurt
- 1 Tbsp Coconut oil
- 2/3 Cup Unsweetened Coconut Milk or Unsweetened Almond Milk
- 6 egg whites (beaten)
- 2 Tsp Vanilla Extract
Directions:
- Pre heat oven to 350
- Mix all wet ingredients into the flour (and beat egg whites well before adding to the wet mix)
- Mix all dry ingredients then slowly add into the wet/flour ingredients mixing well
- Spray or line a 12 cup muffin tin pour batter evenly and top with a bit of the unsweetened shredded coconut
- Bake for 15-20 mins
