I made this tasty soup tonight. We also paired it with a small portion of Quinoia.
Ingredients
- 1/2 Onion
- 1 Red Pepper
- 4 Chicken Breast
- 3 tbsp Olive Oil
- 1 cup diced Tomatoes
- 1 can light Mushroom Soup
- 2 Garlic Cloves
Directions
- Heat a sauce pan with Olive Oil, then add the minced Onion, Red Pepper and Garlic.
- Let this cook down for about 10 mins then add the 4 Chicken Breasts sliced.
- Stir and cook with the lid on until the Chicken is no longer pink, maybe 10 more minutes or so.
- Drain any water and add the Mushroom Soup and Tomatoes. I also added a small amount of Italian Spices and maybe 1/2 tsp of Salt and some Peppercorns.
- Let this start to bubble on Medium, this should take 5 -10 mins and its ready to eat once it cools a bit.
