Gingersnaps are one of my favorite holiday cookies so I thought I would try making a healthier version to satisfy my sweet tooth. These cookies taste sooooo yummy you would never guess they are good for you!!

Protein Gingerbread Snaps
Ingredients
- 1.5 cup of Ground Oats or Oat Flour
- 1/2 cup Vanilla Protein powder
- 1/4 tsp Sea Salt
- 1/2 tsp Baking Soda
- 2 tbsp Truvia
- 1 tsp cinnamon
- 1/2 tsp cloves
- 2 tbsp ground ginger (or 2 tbsp Fresh Grated Ginger)
- 2 tbsp Black Strapped Molasses
- 1/4 Unsweetened Almond Milk
- 2.5 tbsp Coconut Oil
Directions
- Pre heat oven to 350
- Mix all dry ingredients together
- Mix all wet ingredients together( I microwaved wet ingredients for 40 secs so the coconut oil wasn't chunky)
- Add the wet ingredients to the dry and mix well
- Roll dough into 1 inch balls and roll in a little Truvia then flatten with a fork
- Bake for 8 minutes
Makes approximately 20 cookies
