Protein Gingersnap Cookies

Gingersnaps are one of my favorite holiday cookies so I thought I would try making a healthier version to satisfy my sweet tooth. These cookies taste sooooo yummy you would never guess they are good for you!!

Protein Gingerbread Snaps


  • 1.5 cup of Ground Oats or Oat Flour
  • 1/2 cup Vanilla Protein powder
  • 1/4 tsp Sea Salt
  • 1/2 tsp Baking Soda
  • 2 tbsp Truvia
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 2 tbsp ground ginger (or 2 tbsp Fresh Grated Ginger)
  • 2 tbsp Black Strapped Molasses
  • 1/4 Unsweetened Almond Milk
  • 2.5 tbsp Coconut Oil


  1. Pre heat oven to 350
  2. Mix all dry ingredients together
  3. Mix all wet ingredients together( I microwaved wet ingredients for 40 secs so the coconut oil wasn't chunky)
  4. Add the wet ingredients to the dry and mix well
  5. Roll dough into 1 inch balls and roll in a little Truvia then flatten with a fork
  6. Bake for 8 minutes

Makes approximately 20 cookies
