PB & J Valentines Protein Cookies

Ingredients

  • 1 cup of All Natural Peanut Butter
  • 1 large Egg
  • 1 large Egg White
  • 1 tbsp Unsweetened Apple Sauce
  • 1 oz water
  • Add Truvia or your favorite sweetener to taste
  • 1 scoop of Vanilla Protein Powder
  • 1 cup Ground Oats
  • 1 tsp Baking Soda
  • 1 tbsp Vanilla Extract
  • 1/3 cup sugar free raspberry jam (stirred to loosen)

Directions

  1. Preheat oven to 350 degrees.
  2. Microwave 1 cup of PB for 30 seconds, which will make it easier to mix. In a medium bowl mix PB with 1 Egg, 1 Egg White and 1 tbsp unsweetened apple sauce, 1 oz water and 1 tbsp vanilla extract.
  3.  Add Vanilla Protein powder, Oats, Truvia and Baking Soda and mix well
  4. Roll dough into 1 1/2-inch balls (about 2 tablespoons each). Arrange on parchment-lined baking sheets. Press into 1 3/4-inch rounds. Press hearts into centers using your fingertips.  
  5. Fill indentation of each with a generous 1/2 teaspoon of sugar free jam to form a heart.
  6. Bake for 10 mins
