Chocolate Coconut Protein Muffins

Ingredients

  • 2 Scoops of chocolate protein powder
  • 2 Tbsp Truvia
  • 4 Tbsp Cocoa Powder
  • 1/2 Cup Ground Oats of Coconut Flour
  • 1 Tsp Baking Powder
  • 1 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 1/4 Cup Unsweetened Shredded Coconut ( and a little extra for dusting)
  • 1/2 Cup Unsweetened Apple Sauce
  • 1/4 Cup Non fat Greek Yogurt
  • 1 Tbsp Coconut oil
  • 2/3 Cup Unsweetened Coconut Milk or Unsweetened Almond Milk
  • 6 egg whites (beaten)
  • 2 Tsp Vanilla Extract

Directions:

  1. Pre heat oven to 350
  2. Mix all wet ingredients into the flour (and beat egg whites well before adding to the wet mix)
  3. Mix all dry ingredients then slowly add into the wet/flour ingredients mixing well
  4. Spray or line a 12 cup muffin tin pour batter evenly and top with a bit of the unsweetened shredded coconut
  5. Bake for 15-20 mins
