Chicken and Tomato Red Pepper Soup

I made this tasty soup tonight. We also paired it with a small portion of Quinoia.


  • 1/2 Onion
  • 1 Red Pepper
  • 4 Chicken Breast
  • 3 tbsp Olive Oil
  • 1 cup diced Tomatoes
  • 1 can light Mushroom Soup
  • 2 Garlic Cloves


  1. Heat a sauce pan with Olive Oil, then add the minced Onion, Red Pepper and Garlic.
  2. Let this cook down for about 10 mins then add the 4 Chicken Breasts sliced.
  3. Stir and cook with the lid on until the Chicken is no longer pink, maybe 10 more minutes or so.
  4. Drain any water and add the Mushroom Soup and Tomatoes. I also added a small amount of Italian Spices and maybe 1/2 tsp of Salt and some Peppercorns.
  5. Let this start to bubble on Medium, this should take 5 -10 mins and its ready to eat once it cools a bit.
