Grilled Chicken with Pineapple Avocado Salsa and Tomato, Cucumber and Avocado Salad
Pineapple Avocado Salsa
Ingredients
- 2 cups of diced pinapple
- 1 avocado, diced
- 1 jalepeno, seeded and finely diced (half of a jalepeno for less spice)
- 1 cup of chopped cilantro
- 1/2 cup finely chopped red onion
- 2-3 tbsp pf lime juice
- Sea salt and Cracked black pepper to taste
- 1/4 tsp cumin
Combine all ingredients in a bowl and top on grilled or bbq chicken.
Tomato, Cucumber and Avacado Salad
Ingredients
- 1 cup of chopped cherry tomatoes
- 1 large cucumber- peeled, seeded then diced
- 1 avocado diced
- 2 oz of light feta cheese cubed
- 2 tbs minced red onion
- 1 handful of parsely finely chopped
- 2 tbsp of extra virgin olive oil
- 2 tbsp of red wine vinegar
- Cracked black pepper to taste
Mix all together and serve. If not serving immediatly then add the avocado to the rest of the ingredients right before serving
